Avocado Salad
Avocados are a favorite around here and we just can't get enough of them. We definitely take pleasure in the little things when it comes to food. Our pretty strict diet doesn't allow for "normal." You won't find pizza and ice cream on our grocery list, but you will find avocados and this is one of my favorite ways to eat them.
After a trip to San Diego's Holy Matcha, and holy matcha you have to go there, I was in love with their avocado toast (yes, this was a total splurge for me, but soooo worth it). And I wanted more! We said goodbye to the delicious sourdough bread at home and made a simple avocado salad that has become a staple around here.
Ingredients
1 ripe avocado
Flaky Sea Salt, we love this one!
Pepper
Red Pepper Flakes
Cayenne Pepper
Lemon Wedge
Procedure
Peel your avocado and remove the pit. Cut avocado in quarters and season to taste with spices. I even add a sprinkle of curry powder every now and then. Squeeze a little fresh lemon juice over the top and enjoy!
If you're like us (everything free, gluten, grain, dairy, etc.) toast a few sweet potato slices and fry an egg for your own Sunday brunch breakfast "sandwich".
